
Vouette & Sorbee 'Fidele' Blanc de Noirs Champagne
- ABOUT THE WINE: FidĂšle is 100% Pinot Noir grown on Kimmeridgian limestone soils. This includes roughly 5% reserve wine from a perpetual blend started in 2001 and stored in two large old foudres. The Fonnet vineyard, located in a small, enclosed valley, forms the heart of this cuvĂ©e. SorbĂ©e provides much of the balance, topped off by ChĂątelâa rocky, limestone-rich vineyard with 20-plus-year-old Pinot Noir vines. Overall, the vines average 30 years of age. After pressing in a traditional vertical Coquard press, FidĂšle is vinifiedâwithout added yeast or chaptalisationâin used Burgundy barrels for 10 months (these came from Domaine Arnaud Ente in Meursault). The wine then spends 15 to 20 months on lees in bottle after secondary fermentation and is disgorged with zero dosage. Gautherot describes this as âa dangerous wineââthe bottle disappears so quicklyâand this description could not be more apt. Dry, savoury and super mineral! Bibendum

ABOUT THE PRODUCER: Bertrand Gautherot set out on the path of his project in 1993, working old family vineyards, and converting them to biodynamic cultivation in 1998. The name of the winery is composed of the names of the 2 main vineyards: Vouette on Kimmeridgian limestone (the parent rock that extends all the way to Chablis) and Sorbée on Portlandien soil (gray limestone). It farms a total of 5 hectares and produces approx. 25,000 bottles per year.
