We chilled the fruit to 5C overnight then gently whole bunch pressed to yield fine, cloudy juice. Fermentation was completed by wild yeast in tank then aged on fine lees for seven months, bottled without fining or filtering. Citrussy, tangy & textural." Wines of Merritt
